Syn Free Spring Rolls (Slimming World Style)

How many does it serve? 1 or 2 people

How long does it take? 20 minutes

What do i need?
– around 10 sheets of Lasagne
– 1 packet of Stir fry mix (around 60p in the supermarket)
– Soy sauce
– Fry light

How many syns? 0, none, zero, zilch!
What do I do?
Boil your lasagne sheets until soft, once this is done, empty half the water away and top up with COLD water. Fry your stir fry mix until cooked, adding in some soy sauce (pour in as much as you need). While this is cooking grab an oven dish and line with baking paper or spray with fry light if you haven’t got any paper.

When the stir fry mix is cooked, leave it in the frying pan, grab a warm lasagne sheet which should still be floppy, and lay flat.

Spoon in some stir fry mix and roll up and place onto oven dish.

Once rolled, spray a little fry light over the rolls and place in the oven, at 180c for 20 minutes or till crispy, you’ll get like a blistering pattern on the spring rolls, this is normal, means they are very nearly ready!

*the trick to cooking these is being prepared, make sure you’ve got everything out you need before you start spooning in the stir fry mix, as the lasagne sheets don’t need long to go rock hard, and this makes rolling them difficult!*

ENJOY!

Jelly / Muller Light Jello/Blamange Slimming World Dessert

This is by far my most favourite Slimming World dessert, so much better than those mug cakes, or my attempt at the syn free ‘omlette/pancake’ style cake.

How many does it serve? 4 people

How long does it take? 10 minutes prep and 12 hrs to chill

What do i need?
– 300ml of boiling water
– Sachet of Sugar free Jelly
– either 1 Muller Light (any flavour) or 1 and a half pots of Muller Light Greek Style (again any flavour)

How many syns? Sugar free jelly sachet is half a syn, so depending on what yogurt you use, a normal muller would make the dessert just 1/2 a syn for the whole thing, or a muller light greek style would make the dessert 1 syn for the whole thing.
What do I do?
Pour 300ml of boiling water into a dish, mix in the sugar free jelly sachet.

Leave to cool for 10 minutes.

Add in yogurt of your choice, mix until there are no lumps.

Put in the fridge to chill overnight or for 12 hours..

Serve with fruits, frozen would be proper tasty!

ENJOY!

Salmon/Tuna & Leek fish cakes Slimming World Recipe.

How many does it serve? well this recipe makes 5 large fish cakes, so you could even get 10 medium size cakes out of it to.

How long does it take? 20 minutes

What do i need?
2 x canned salmon/tuna
2 x leeks
1 x egg
Smash
Water
Frylight

How many syns? Free on EE or red or 12 syns on green
What do I do?
Slice the leeks up and fry for 10minutes to soften them up a little, take off the heat and into a large bowl.

Add the tuna/salmon to the leeks, smash up a little and mix together, then add the whisked egg.

Next bit is a little ‘play it by eye’. With the smash you need to make up enough to equal the salmon and leek concoction. So it’s 50/50. Once you’ve done this add it to the salmon and leeks, and mix together.

Grab a handful of the mixture and mould with your hands into discs. and place on a pre sprayed with frylight dish.

Put in the oven for 20mins on 190c and take out once a golden brown colour.

Eat whilst hot!

Enjoy.

Red Onion Soup Slimming World Recipe

So i’ve wanted to make soup for a while, I keep seeing pictures pop up on Instagram and they look yummy, but i’ve NEVER made soup before, so i took this as a challenge.

How many does it serve? 4 people
How long does it take? 1 hour 40 mins

Is it syn free? Hells Yeah it is!

What do i need?
– 600g of large onions (red or normal!)
– 2 garlic cloves or 2 tsp’s of lazy garlic
– Fry light
– bit of Thyme
– 1.5 litres of beef stock made from Bovil/ failing that if you don’t have bovil you can just use an oxo cube with 1 litre of hot water
– 1 tblspn of sweetener
– Salt & pepper

What do I do?
Spray a large sized frying pan with fry light and set to a medium to high heat.
Halve the onions and slice them thinly. Finely slice the garlic if you’re using the real stuff and throw in the frying pan. Stir and cook for 6-8 minutes before turing the heat to low. Allow to cook gently for about 30 mins (OR until lightly brown/or you can see they’re soft, don’t let them burn or go crispy!)
Add the thyme stuffs, you only need a little! and stir and cook for 2-3 minutes.
Pour in the beef stock and bring to the boil. Cover, reduce the heat to low and simmer gently for 40-45mins stirring occasionally. you can throw in the sweetener and seasoning as well now.
This soup doesn’t really thicken, (for some reason i thought that it might!) it’ll reduce a lot but its not a thick soup, so leave it for the 40-45 minutes to do its thing and then serve straight away. I put mine in the fridge and am going to microwave and put it into a thermos and take it to work with me for lunch!

Enjoy!
