Slimming World Vegetable Quiche Recipe

How many does it serve? 2 people

How long does it take? 30 mins & 15 minutes prep

Is it syn free? Hells Yeah it is!

What do i need?
– Peppers
– Onion
– Baby Corn
– Courgettes
– Mushrooms
– Tomatoes
– 3 eggs
– 150g fat free natural cottage cheese
– Seasoning
– Parsley (doesn’t have to be fresh!)

What do I do?

Prepare whatever Superfree veggies take your fancy… i just used what i had in the fridge, peppers, onions, courgettes, baby sweetcorn, mushrooms and tomatoes. I’d recommend frying your veg for 10 minutes to soften them up a little or if you fancy a crunchy quiche just leave them raw.

Mix together the 3 eggs, cottage cheese and some parsley.

Spray the oven proof dish with a little fry light and throw in the vegetables then pour the cottage cheese/egg mix over the top.

Throw it in the oven at 190ºC for around 30 minutes, or until the quiche is set and golden brown.

Enjoy hot or cold!
