Fanta Chicken Slimming World Recipe

So i’ve had the Smash Pizza, the diet coke chicken, and pizza topped chicken, but now i needed my chinese fix! Well a Slimming World equivalent. Fanta Chicken.

How many does it serve? 2 people

How long does it take? 30 – 40 minutes (incl. prep)

What do i need?
– Cut up Chicken Breast (enough to feed two people)
– Passata (250ml)
– Onions
– Pineapple Chucks (if you’re using canned pineapple you need to syn these, 2.5 syns when drained)
– 3 Sliced Bell Peppers (or frozen, just as good!)
– 1 Tsp Soy Sauce
– Fry Light
– 250ml Fanta Zero (Or any other Orange soda as long as its sugar free!)
– Rice (i used Uncle Bens Special Fried Rice – 4syns) you can use just boiled rice as its syn free

What do I do?
Spray a large sized frying pan with fry light and set to a medium to high heat.

Add the diced onions to the pan, once they’re starting to looked cooked add the chicken (make sure not to over do the chicken at this stage).

If you need to add a little more fry light to the pan and throw in the sliced peppers. Keep these in the pan for around 8mins/or until they looked soft/cooked.

Add the passata and soy sauce into the mix. Make sure to heat up the Fanta Zero (i stuck it in the microwave for 4 minutes, obviously not in the can!) before adding with the passata and soy sauce.

At this point the mixture will look like a watery mess but rest assured it will thicken!!

Turn the heat down to a low simmer, and leave covered, i had no lid for my frying pan so i just stuck a slightly bigger pan over the other one, for about 20 minutes. Keep checking it as when it does eventually thicken it happens quickly.

At the very last 5 minutes throw in some pineapple (you can add it before BUT when you cook pineapple it adds more syns!)

As soon as the liquid thickens turn off the heat and serve immediately with a side of water rice you fancy, i used Uncle Bens Express rice (these are syned as they have a little bit of oil in to make the rice not stick when you throw it in the micro!) failing that you could always just use plain boiled rice which i think is syn free/very low syn.

Slimming World Magazine Issue 99 – Things that caught my eye

So its only been the second time I’ve purchased the Slimming World mag, but i thought i’d make a monthly post of the stuff i thought was worth making a note of, recipes that i’ll attempt, new free/low syn treats food so I don’t have to remember to take the magazine with my shopping!

Bit gutting after only loosing 1lb this week, but a 1lbs better than nothing or putting on right?!

– Not sure as i’m staying at the boyfriends tonight so i don’t imagine it’s going to healthy!

Slimming World Chocolate Maple Cake Recipe

I tried baking a similar cake before last year, i think it was the curly wurly chocolate cake, it was edible, but it didn’t taste too good. This recipe does.

On all Slimming world plans – 3 syns for a quarter serving of cake OR if your using scan bran as your HEX B its only 6.5 syns for the WHOLE cake!

Ingredients
5 Scan Bran (5 syns)
3 beaten eggs
1 level tbsp of golden syrup (2 syns)
1oz Options Belgium Hot Choc (4.5 syns)
1/4 cup of sweetener
Fry-light

How to make!
– Preheat oven to 200c
– Soak the Scan Bran in boiling water to soften. Drain and mash.
– Mix together the eggs, hot choc, sweetener and syrup.
– Spray a cake tin, round or rectangle whatever you’ve got!
– Bake in the oven for 25-30 mins

After it’s been in the oven for 25 mins
Ready to eat!

Slimming World Smash Pizza recipe

I’d seen a few images knocking around on Instagram (when you search #slimmingworld – i do alot, it usually gives me meal ideas, inspiration and such)

I love pizza, and really miss having it on the diet and when i do eat it i feel bad. I decided to give it a go, and I was very surprised at how good it was. As crazy as it sounds, you don’t get the same Smash taste, and although its not the same as a pizza, it’s close enough to satsify a craving. If you count the cheese as a healthy extra, its also syn free.

FYI if you’re using a normal baking tray, cover it in tin foil, and spray with fry light so the base doesn’t stick!

 
Ingredients
(For 1 pizza, which I had all to myself!)

Base
60g smash
sprinkling mixed herbs

Topping
Very Lazy garlic
Tomato puree (1 syn for 2 table spoons) OR you can use passata
42g grated cheese (HEXA)
Free toppings of your choice (e.g. mushrooms, tomatoes, chicken, ham, peppers, etc)

Method

  1. Wrap a oven tray with tin foil and spray with fry light or Spray a pizza tray with fry light (depending on what try you’ve got)
  2. Mix the smash and herbs with boiling water. Add the water a few drops at a time, and mix until you have a dough. Be really careful not to make it too watery – this makes it sticky.
  3. Use your hands to flatten the smash mixture onto the pizza tray – try and get it as thin as possible without it falling apart
  4. Bake in the oven for about 10 minutes ON BOTH SIDES, until crispy.
  5. Add the passata/puree/lazy garlic, mozarella, oregano and toppings
  6. Pop back in the oven for another 10 minutes, and its done
