I found this recipe, or a take on it, from SkinnyTaste and i’ve edited it a little bit to be a SlimmingWorld friendly dinner or lunch! A lot of people have called this recipe a Cheeseburger casserole, but I’n my opinion its more of a ‘bake’.
If you love a good cheeseburger you’ll love this. Its SUPER tasty!
How many does it serve? 4 (or 2 if you’re really hungry!)
– Pasta 300g
– 1 can of chopped tomatoes
– Reduced Fat cheddar 40g (HEX A)
– 1 red pepper
– 1 onion finely chopped
– 2 garlic cloves / or a flat tablespoon of lazy garlic
– pinch of salt and pepper
– 1 tea spoon of paprika
– 4 tablespoons of Passata
– Jar of pickled gherkins
Preheat the oven to 150c
Cook the pasta as per the packet instructions and put to one side
In a big frying pan, or wok if you fancy, spray some fry light and throw in all the chopped onions.
Cook the onions on a medium heat for 5 minutes until they’re soft.
Throw in the garlic and mince and cook on medium until browned.
Add in the pepper and any other veg you fancy, i threw in some mushrooms too.
Pour in the chopped tomatoes and passata along with the salt, pepper and paprika.
Now let the mixture bubble and thicken up a little.
Once everything looks good, and thickish grab the pasta you’ve put aside and carefully add to the same frying pan and mix the pasta and sauce together to evenly coat.
Spoon the mixture of pasta/mince/sauce into a oven proof dish, and sprinkle your cheese over the top.
Put the dish in the oven for around 15/20 mins until the cheese is all melted.
Serve with a sprinkling of cut up gherkins on top.
